Tiramisu Will "Make You Happy!"
If you have never tried Tiramisu you have been seriously missing out on one of the great taste treats. What is tiramisu you ask? Well, we can tell you that it is an Italian creation although the actual creator of the dish is in question. It appears to have first hit the food scene in 1969 in Venice, Italy, and was claimed by Carminantonio Iannaccoone as his original recipe.
Whatever, tiramisu first appears in a cookbook in 1983 and Webster’s Dictionary first mentioned it in the 1982 edition, categorizing it as a dessert, which it certainly is.
And what a dessert it is! The translation of tiramisu means “pick me up” and as a metaphor it means to “make me happy.” Those are certainly apt descriptions for this tasty treat is made of coffee-soaked biscuits (Savoiardi) and a sweet mixture of mascarpone cheese, eggs and sugar. It is made by alternating layers of the biscuits and the sweet mixture and often includes cocoa powder topping. Some chefs also soak the biscuits in Marsala wine or dark rum.
The variations are many; some cooks use different finger cakes instead of biscuits; some use different cheese, and some vary the liquor used to include Madeira, port, brandy or cognac. There are also reports that raw eggs are used in some recipes and of course the type of coffee is varied as well. In fact, the name “make me happy” is believed to have been derived from the fact that espresso was originally used in the recipe.
