As Chef Franson was making one of these great salads the other day he started wondering about the history of the Wedge Salad. You know, all great dishes have a history, right? So we thought we would take care of Chef Franson’s curiosity and find out where the Wedge Salad came from.
From all available research the Wedge Salad became a popular dish back in the 50’s and 60’s. There are references about iceberg lettuce in books dating back to the 1920’s but no mention of Wedge Salad until the “Leave It To Beaver” years. At that time many of the best restaurants in the country served and boasted a Wedge Salad as one of the finer salads available on the menu.
Suddenly the Wedge disappeared as more exotic salads began to appear on menus. The Wedge was just too “ordinary” for the finer restaurants to serve and everyone was into exotic names and new ideas.
But the Wedge was not to die. Instead, it became the recycled idea for trendy restaurants, and in the last few years Wedge Salad has made a great comeback. The addition of blue cheese and nuts seems to have made The Wedge a popular item once again. Isn’t it amazing how something so simple could have such a checkered past?
